The Experience
Tucked above the shops on Rue Samuel Fahlberg, Sky Bar is the kind of place you climb up to and immediately exhale. The room opens onto a wraparound terrace that stares straight down onto Gustavia's mega-yacht basin and the Caribbean beyond, with the whole thing bathed in ambient lighting and a low, ambient hum that swells as the night goes on. It starts as a proper sit-down dinner spot — Japanese-Caribbean sushi, sharing tapas, a serious wine and champagne list — and slowly morphs into a lounge as resident DJ Franck N (a 25-year Ti St Barth veteran) turns the dial up. By eleven the tables have loosened, the cocktails are flowing, and Gustavia is glittering below.
What to Try
Anchor the night around the sushi: the Dragon Roll (tempura shrimp, avocado) and the Rainbow Roll built on the day's local catch are the crowd-pleasers, with tempura crab and the Japanese omelet as smart tapas to share. For the bar, the house Sky Breeze — local fruits and premium spirits — is the signature; the tropical mojito is the reliable second round. If you're staying for dinner, ask the sommelier to pair a chilled rosé or a grower champagne with the sushi flight.
Insider Tip
Book the 6:30 pm seating and ask specifically for a terrace-edge table on the harbor side — you'll catch the sunset over the masts with your first cocktail, then linger as the DJ ramps up and the restaurant quietly turns into St Barth's most stylish rooftop lounge. Wednesdays are dark, so don't leave it to chance.
