Gyp Sea Hotel — Colombier Hill's Bohemian-Colonial Hideaway

Cote d'Azur flamboyance meets Caribbean calm above Flamand Bay.

Why Go

Perched high on Colombier Hill with the whole sweep of Flamand Bay laid out below, Gyp Sea is the antidote to St Barth's beige-linen minimalism — 22 bungalows and villas dressed in bold prints, colonial rattan, and treasures dragged home from Jaipur, Tunisia, and Peru by designer duo Jocelyne and Marie Sibuet.

The Experience

You arrive up a switchback road on the island's quieter northwest edge and everything softens: tropical gardens, a resident pair of chatty parrots, and the kind of hush you only get when you're a few hundred meters above the sea. Bungalows and Master Villas are staged like little private worlds — some with 10-meter plunge pools angled straight at the horizon — and days pivot between the hillside pool, the leafy library corner, the Pure Altitude spa, and the hotel's off-site beach club down at Saint-Jean/Pelican Beach where crisp Amalfi-style loungers, ceviche, and tuna tiradito wait. Dinner at the main restaurant leans French-Mediterranean with Caribbean lift; the rum-and-cigar bar keeps 120 bottles in a courtyard of Creole accents. It is unapologetically maximalist, warmly staffed, and — because it's five minutes from Anse des Flamands and ten from the airport — surprisingly practical for a hideaway that feels remote.

What to Try

Book the Pure Coconut Ritual at the Pure Altitude spa (natural scrub plus after-sun repair — genuinely restorative after a day on the water). Reserve the Chef's Table 24 hours ahead for a bespoke Mediterranean-Caribbean tasting menu that isn't on the standard card. Take the shuttle down to the Gyp Sea Beach Club at Pelican for a long lunch of lobster tartare and cold rosé, then walk it off along Saint-Jean. Sundowners on the restaurant terrace as the light drops behind Flamand Bay are the reason to be here — get there by 5:45pm.

Insider Tip

Ask specifically for a Master Villa on the upper terraces — the private 10-meter pools face due west and the sunset show from the water is better than anything you'll get poolside. And pack louder swimwear than you think you need: the dress code here trends 'tutti frutti,' and quiet beige will feel out of key at the beach club. One thing to plan around — the hotel closes from August through early November, so peak hurricane-season travelers should book December through mid-July.

The Practical Stuff

Colombier, roughly 10 minutes from Rémy de Haenen Airport and 15 from Gustavia by car — a rental or hotel transfer is essential as the hill is steep. 22 bungalows and villas plus separate Beach Houses down at Saint-Jean. Airport transfers, à la carte breakfast (7:30–10am), and beach-club access are typically included at the top rate points. Pet-friendly (roughly €35/night). Beach club kitchen winds down around 10pm. Book villas 3–6 months out for high season (Dec–Apr); rates run from the mid-four figures euro in peak weeks.

Pair It With

  • Anse des Flamands — The wide crescent of white sand directly below the hotel — a five-minute drive down the hill for a barefoot morning swim before the loungers fill up.
  • Gyp Sea Beach Club at Saint-Jean — The hotel's own Amalfi-styled outpost on Pelican Beach for long ceviche lunches and afternoon rosé — reachable by complimentary shuttle.
  • Colombier Beach hike — The 20-minute cliff path from Anse des Petits Cayes down to secluded Colombier is one of the island's best walks and ends at a snorkeling cove with almost no crowd.
  • Gustavia Guide — A 15-minute drive for harborside shopping, Ligne St Barth boutiques, and dinner at Bonito or Orega when you want a break from on-property dining.
  • Absolute Hot Yoga, Gustavia — A grounding morning class in town before you settle back into hillside languor — pairs nicely with a spa afternoon.
