The Experience

Chef Carte d'Or is a private-chef and in-villa dining service rather than a bricks-and-mortar restaurant, which is exactly how a lot of long-time St Barth visitors prefer to eat once they've done the Nikki Beach circuit. Bookings are made ahead by phone or WhatsApp through a mailing address in Gustavia (BP 457), and the chef travels to your villa — most often the hillside properties around Colombier, Lurin, and Pointe Milou — with provisions from the morning markets and the fishmongers at the harbor. Expect a French-Caribbean menu shaped around what came in that day: local snapper or mahi, langouste when it's in season, produce from the small farms above Saint-Jean, and a proper cheese course flown in from the métropole. Service tends to be an all-evening affair rather than a rushed seating: apéritif on the terrace, a plated three- or four-course dinner, and coffee while the sun drops behind Colombier.

What to Try

Ask for the catch-of-the-day tasting menu — it's the truest read on what the chef found that morning and usually leans on Créole spice, beurre blanc, or a light passion-fruit reduction. A langouste grillée with vanilla butter is the splurge order when spiny lobster is running (roughly October to April). For lunch service or a smaller booking, request the plateau apéritif dînatoire: accras de morue, tuna tataki, and chilled rosé from Provence.

Insider Tip

Book at least a week ahead in high season (mid-December through early March and around the Bucket Regatta) and confirm dietary restrictions when you reserve — the chef shops to the menu, so last-minute pescatarian or gluten-free swaps are harder to accommodate than at a standard restaurant. If your villa doesn't have a serious kitchen, mention it up front; the team can bring extra burners and prep gear but needs the heads-up.
